Renowned bartender Dick Bradsell, star of Channel 4's Dick’s Bar, created this twist on the ‘old fashioned’ in the early nineties.
To make this drink our way, you first have to spend some time on ice. We hand freeze ice blocks for three days at -21 degrees, which we hand cut and mould into blocks for our stemmed glassware. To do this, get a tupperware tub and boil a kettle, let the water cool, then boil again. This removes any minerals or gasses in the water allowing it to freeze with no impurities, seal the tub and let freeze. Once it has frozen, break the ice into blocks that can fit in a glass.
Grab a large beaker, fill with ice and add the following -
2 dashes bitters
20ml Maple Syrup
50ml Pressed Apple Juice
50ml Aged Rum
Stir the ingredients for around 30 seconds to chill, then strain over your hand made ice block and smile.
