Beetroot & Juniper Semi Freddo with Cocoa Soil & Beetroot Soup
Beetroot and juniper to me sing out winter and are at their best over the festival period. Very often after a large Christmas dinner the thought of pudding can be too much but this light dessert is a great alternative. It also has the advantage that all the different components of the dish can be made the day before. Don't be put off by the name of the cocoa soil as it is a great textural counterpoint to the beetroot.
Chestnut Veloute with Crispy Artichoke
This soup uses all the flavours of a traditional chestnut stuffing but I have adapted it as a first course soup, the beauty of this dish is that it can all be made well ahead of time. For vegetarians just omit the pancetta.
