Enjoy a truly indulgent five course Christmas Day Dinner menu at the Blythswood Square luxury hotel restaurant in Glasgow.

Starters
Cremeux of Rougie foie Gras with hibiscus-cabernet sauvignon vinegar jelly
Celeriac and thyme Veloute with shaved Chestnuts and Watercress coulis
Wild seabass with compressed watermelon, broccoli-miso puree, pumpkin seed and nori
Salar hot smoked salmon with potato and chive blini, fresh horseradish sauce and pickled beetroot
Second Course
Cauliflower panna cotta with parsley jelly and crispy capers
Mains
Organic Scottish turkey with traditional trimmings and armagnac juices
Red wine risotto with panko crusted gorgonzola, watercress and pea shoots
Fillet of Black Gold beef with braised shin “bon bon”, truffle mash and crispy pancetta
Tranche of line caught halibut with crushed ratte potatoes, salsify and roasted cepes

Kir royale champagne granite with cassis espuma

Traditional Christmas pudding with griottine cherries and French crème fraiche
