As an active champion of sustainable produce, especially within the Scottish oceans, a subject which Tom speaks frequently and passionately about, he is looking forward to sharing his ethos so diners can have the best and most knowledgeable experience possible during the six course meal. Tom’s philosophy on utilizing high quality British produce is designed not just to maintain a balance with nature but also to deliver a unique dining experience where exquisite flavours and refined textures constantly greet the palate.
